Veggie Omlette/ Spanish Omlette

This recipe was given to me by one of my dearest friend who always pushed me to try and eat new things.That was a time when I was not fond of mushrooms at all and my husband a die hard fan of that fungus !
But, when i ate this omellet for the first time I actally developed a passion for that fungus :)

Ingredients
5 Eggs
1 Chopped Green bell pepper
1 Large Onion chopped
2 Long carrots finely chopped
10-12 chopped Mushrooms (button mushrooms)
few Green beans chopped finely
Coriander/cilantro chopped
Few green chillies chopped (optional)
Salt
Pepper
Oil

Method

1. To a pan add oil. When heated thru add onions.Saute them for few minutes and then add all the veggies except mushrooms.Saute until partially tender and then add mushrooms.Saute on high for few minutes (this will take out all the water that mushroom leaves). Add salt and pepper. Let it cool

2. Beat eggs till light n fluffy.Add a lil salt, pepper,coriander and green chillies to them. Mix the veggie mixture in them.

3. Coat a non-stick pan with oil /butter . When heated add the egg batter to it and cover it for few minutes on Low.

4. When the egg starts setting from bottom carefully flip it and roast on other side uncovered. Make sure it is cooked well from the inside.

5. Cut in the shape of pizza slices and serve with toast n ketchup !

Tips n Tricks: This omlette will be thick so make sure it gets cooked thoroughly from inside.
One trick to flip this heavy omlette is to transfer it to a plate when it is brown on fist side and then flipping it back into the pan.(It would be a lil messy but without any breakage !)

French Toast

Typically, french toast is made with bread and eggs adding milk n sugar.Then they are topped with powdered sugar, butter,maple syrup,fruit n whipped creme and so on.This is my take on french toast satisfying indian taste buds.As my sweet tooth is missing since childhood, I tend to satisfy the spicy one.
French toast go best with french bread or challah but if these are not available then regular white bread with thick slices is also fine.

Ingredients

Bread (preferably with thick slices and not so fresh)
4 Eggs beaten
1 Large onion chopped
Fresh Cilantro/coriander chopped
few Green chillies
Salt
Pepper
Oil or butter for cooking (I used olive oil for us and butter for kids !)

Method

Heat a nonstick pan over medium heat.
Beat eggs well and combine them with chopped onion,salt ,pepper, coriander and chilles(if u like)
Cut each slice of bread into two triangles and keep aside.
Now one slice at a time, soak bread in egg batter on both sides, then cook in pan until golden brown on each side. Make sure egg is cooked through all the way , keeping the heat on low.
Serve with tomato ketchup or green chutney or mango pickle !


Tips n Tricks: Fresh bread tends to get soggy as soon as it is dipped in egg batter so try wheat bread or 2-3 day old bread.
The bread should not to be dipped for more than 5 sec on each side.
